what should i use to vary the speed of a starter motor?

i am doing a school project to make a go kart, and i don’t know how to vary the speed of the motor, i am using a panasonic car battery. (12 volts)

While saying 12 volts means something it is not the important thing. The amount of AMPS the starter motor draws is quite high. The size of the battery cables in a car should tell you something. You will need a VERY hefty rheostat to vary the speed AND it will generate a significant amount of heat.
